We have actually left potatoes in our tower all the way through winter (February) before the spring rains made the soil too damp. The remaining potatoes were harvested and stored in our root cellar (a corner in our unheated garage). Using this method we had fresh from the garden potatoes all year long. Get two towers, and plant one with red or other steamer type potatoes and the other with the larger baker potatoes.
